Summer means bright and scrumptious treats to energize us without feeling heavy. These bars are ridiculously addictive and super easy to make. After countless tries of different peanut butter and jelly treats, we found a winner. If peanuts and jelly are your thing, this bar is definitely for you.
These bars are perfect for breakfast, mid-day or that late night dessert we all crave. Using only simple and whole ingredients combining raw nuts, unsweetened coconut, and organic jam, this recipe comes together in no time. We used organic jam, but as the spring season rolls around, you could use your own homemade jam to really add a special touch to these bars.
Not only is this recipe delicious, but it is also nutritionally superior to any store bought bar you will buy. Walnuts and almonds have incredible health benefits which boost from being antioxidants, high in omega 3-6, container fiber and protein. The real winner in this bar is the coconut. Coconut is one of the most nutrient dense foods on this planet. This beautiful tropical fruit can provide you with enough energy to power you through an entire day. Coconut is super high in electrolytes, iron, and fats which all add to a well-balanced diet.
Place these bars in the fridge after they have cooled in an airtight container. They will last up to five days (if they last that long!). You can top these bars with a variety of jams if you aren’t fond of strawberry. A great alternative would be to use apricot jam which is a milder flavor.
