Vegan Chocolate Truffles
March 09, 2015Sometimes that hankering for chocolate comes along and just cannot be beat. Fortunately, there are plenty of healthy chocolates available on the market nowadays, even ones that are vegan and raw! However, these can get a bit pricey, and sometimes it’s nice to make treats in just the size and with just the ingredients you want. So stock up on these ingredients so you can be ready whenever that craving hits!
Vegan Chocolate Truffles
Ingredients:
- 2 cups medjool dates, pitted
- 1/2 cup bittersweet chocolate, finely chopped
- 2 tablespoons orange zest
- 2 tablespoons unsweetened cocoa powder, plus more for dusting
- 2 tablespoons coconut oil, softened
- 1 teaspoon kosher salt
Directions:
These truffles are great and easy with fresh dates, but dried ones work too as long as you soak them for about 30 minutes beforehand. Once your dates are ready, pit them. This is as simple as slicing them open to remove the pit.
Combine all the ingredients into a food processor or blender and pulse until you get a good paste. You may need to scrape down the sides occasionally. Once they’re ready, put a little coconut oil on your hands and roll the paste into small balls. Roll the balls in the extra cocoa powder, and you’re ready to go!
You can serve them (or enjoy them yourself) right away, or you can leave them in the fridge for a bit to get more firm. Store any extras in the fridge and eat within five days. Keep in mind that this is a treat, so the serving size will only be two or three balls. Space ‘em out and enjoy for a few days!
