You might have stumbled over the sweet and healthy concept, but yes, those two words can go together. And trust me when you make these yummy treats, you will agree! I love to make different types of peanut butter energy balls, and this time I wanted something different but something that still had the sweet and nutty mixture of peanut butter and maple syrup. That is when I had the brilliant idea of adding crumbled up rice cakes instead of the regular oats. The result? DELICIOUSNESS.

Rice cakes are usually made from brown rice. The brown rice provides fiber, carbohydrates, and phytochemicals. They make a good snack because they are low in calories.
