Papaya Boat

What better way to start your morning off than with this awesome papaya boat. Breakfast on the go doesn’t have to look like that mundane bowl of oatmeal. This papaya boat takes all of two minutes to make. You can store the other half in the fridge for the following morning, and it will be as fresh as when you cut it. We used coconut yogurt in the center of this papaya boat, but you can use any nondairy yogurt of choice. We topped it with an assortment of fruit and seeds to add more nutrients.

But even without nutrient-dense toppings, this deliciously sweet and buttery fruit is packed with nutrients. The best part about eating papaya first thing in the morning is that it contains a digestive enzyme called papain along with fiber which will leave your stomach in tip top shape. As well as being great for digestive problems, papayas are packed with vitamins and minerals. Papaya, although a tropical fruit, is relatively low in sugar and is low calorie. We used coconut yogurt in this recipe, but you can also use a variety of nondairy yogurts such as soy or almond yogurt. This can be found in the health food isle at your local supermarket.

Papaya boats are so much fun to make because you can choose an assortment of toppings that you like. I try to use whatever is fresh and in season to maximize the nutrients that I’m consuming. You can add granola, nuts, seeds, and fruit. You can even swap out the yogurt for nondairy sorbet and make a delicious dessert on hot days.
