Chopped Salad

Chopped salads are just a spin on our traditional and at times boring leafy salad and cost a fortune when they are pre-made. But when you make it yourself, you can save money without sacrificing flavor.
One of the best ways to utilize that fresh produce is to create a fresh chopped salad. Some of the vegetables I used raw while the others I quickly placed in the pan to add another dimension to the flavors. This salad was missing one ingredient, one that many people turn their heads to in the grocery store. This ingredient is Jicama. Jicama is so refreshing and will take on any flavor, herb, and taste. Don’t be afraid to pick up this brown speckled oversized tuber. Jicama is incredible for your digestion as it has a high amount of fiber. One serving of Jicama can give you 40% of your dietary intake of Vitamin C for the entire day. Jicama is low in calorie and can be eaten cooked or raw. Don’t shy away from this vegetable, make it your friend. Jicamas can also be sliced into sticks can be used for dips or bake them into fries!
In the salad, we used an assortment of cucumbers, fresh herbs, carrots, asparagus, and tomatoes. The dressing is super light and made with very few ingredients. We utilized lime, pepper, avocado oil, and a dash of Himalayan salt.
