Blueberry & Oatmeal Cobbler Pops

Struck with the need for some good old-fashioned berry goodness, I put together a frozen treat that is refreshing, nutritious, and convenient. Complete with slow releasing complex carbohydrates, plenty of protein, and lots of probiotics, these Blueberry & Oatmeal Cobbler Pops will amaze. Honestly, it’s like eating blueberry cobbler with a thick layer of fluffy Greek yogurt frosting on top. You will be amazed by their surprisingly good and creamy smooth texture. You might even think you’re indulging in some Haagen Daz; your friends won’t believe these were made without dairy.
You’ll also get a bit of crunch like you’re biting into a graham cracker encrusted blueberry pie. But of course, you won’t be needing a folk and a knife to enjoy these scrumptious ice cream pops. You can leave those at home.
*As always, ingredients should be organic when possible.
Blueberry & Oatmeal Cobbler Pops
Prep time: 45 min
Ingredients:
- 2 scoops Warrior Blend vanilla protein
- 2 scoops Warrior Blend natural protein
- 1/2 cup 100% pure coconut juice
- 2/3 cup plain coconut Greek yogurt
- 1/2 teaspoon cultured probiotic powder
- 1/2 cup fresh blueberries
- 1 tablespoon raw whole almonds
- 1 tablespoon raw whole cashews
- 1 tablespoon coconut flour
- 1/3 cup rolled oats
- 1 teaspoon vanilla bean extract
- 1/2 teaspoon lemon juice
Directions:
2. Add the rest of the blueberries and blend until clumpy. Don’t blend entirely. We want some blueberry goodness in these popsicles.
3. Next pour the blueberry Greek yogurt mixture into ice cream molds.
4. Store in the freezer to set overnight.
5. Take out and eat them whenever you begin to dream of pies and enjoy without all the guilt of a regular pie.
