Soup’s on! As the weather cools down outside, warm up inside with this vegan vegetable soup. It’s filling and bursting with all the flavors of the perfect comfort food!

Vegan Vegetable Soup


  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • ½ cup red bell pepper, diced
  • ½ cup sliced snow peas
  • 1 can garbanzo beans
  • 1 cup diced butternut squash
  • 1 tablespoon curry powder
  • 1 scoop Sunwarrior Warrior Blend Protein, Natural
  • 1 can coconut milk
  • 1 cup veggie stock
  • Sea salt and pepper to taste


  • ¼ cup Pepitas, toasted
  • Fresh lime wedge
  • Cilantro, chopped
  • Jalapeno, sliced

  1. Heat olive oil over medium heat in a large saucepan.
  2. Cook the onion and garlic for 2 minutes and then add butternut squash. Cook until soft
  3. and add the bell pepper, snow peas, ginger and curry powder. Stir to combine and cook
  4. for 2 more minutes.
  5. Add the protein, coconut milk, stock, salt, and pepper, stir well. Cook for 5–8 minutes until
  6. heated through.
  7. Can be served with brown rice or quinoa and top with garnish.
