If something is made with coconut, I'm instantly drawn to it. The problem is, most desserts that contain coconut are also made with dairy, added sugar, and gluten -- three things I avoid. It’s hard enough finding a gluten-free recipe, let alone one that doesn’t include adding copious amounts of sugar, butter, or cream. After doing some experimenting in the kitchen, I discovered a mouth-watering recipe that tastes better and lighter than any blondie you’ve ever eaten. This treat will satisfy any coconut craving you have, and it's the perfect dessert to entertain guests all summer long!

Vegan Coconut Crush Gluten Free Almond Bars

Ingredients

  • 1 cup of almond butter
  • 1/3 cup organic maple syrup
  • 2 flax seed eggs
  • ½ teaspoon baking powder
  • 1 tablespoon organic vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon Himalayan sea salt
  • ¼ cup of 100% organic reduced fat shredded dry coconut + 1 tablespoon
  • 1 handful unsweetened 100% organic coconut flakes
  • 1 handful 69% cacao dark chocolate chips

DIRECTIONS
  1. Preheat your oven to 350 degrees
  2. Generously spray an 8 by 8 pan with coconut oil or line with parchment paper (makes for easier clean up)
  3. Mix together the almond butter, maple syrup, eggs, baking powder, vanilla extract, cinnamon, and sea salt until the consistency is smooth.
  4. Mix in the dry coconut
  5. Pour batter into the pan and evenly spread it to the edges
  6. Sprinkle the dark chocolate chips evenly across the top of the batter in the pan followed by the coconut flakes
  7. Bake for 20–25 minutes or until the edges are firm but the center is slightly moist
  8. Slice and let the bars cool for 30 minutes before enjoying and store them in the refrigerator so they maintain their moist consistency (note – many gluten-free dessert recipes taste richer when kept in a cool environment).
