Hankering for a street taco, but your favorite vendor is closed for the night? Make your own! From tortilla to toppings, there’s nothing you can’t do!

First things first. When purchasing corn please try and make sure it is GMO free or preferably organic. I think corn has been given a bad reputation due to the GMO production of it. There are some of the healthiest tribes in the world that thrive on corn and is a staple.

Tortilla Heaven

Ingredients

Tortilla

  • 2 cups corn flour (masa harina)
  • 1 1/2-2 cups warm water
  • 1 shot lemon or lime juice
  • Dash of sea salt (optional)

Guacamole

  • 2 avocados
  • 1 tomato
  • 1 jalapeno
  • 1 lime
  • 1/4 red onion
  • Pinch of salt

Refried Style Beans

  • 14oz of beans of your choice.
  • 1 onion
  • 1 red pepper
  • 1 jalapeno
  • Pinch of salt

DIRECTIONS

Tortillas

Mix the salt with the flour and slowly start to pour the warm water into the mix until a dough starts to form. You want the dough to form well and be firm to the touch. If it is too sticky, you may have poured too much water and may have to add a little more flour until it is just right. Once you have reached the correct consistency, let it sit for an hour or so.

Forming and cooking the Tortilla

Here are a few ways to do this but for me the easiest way was putting a little flour(corn or even coconut four for a different flavor) on a bread board, taking about a 2 inch ball or bigger and pressing flat down on the dough and spreading it out with your hand. The dough shouldn’t stick to the board. I then used a wok and set the stove top on high and when it was hot cooked on both sides until it become a golden char grilled color.

Guacamole

Take out the seed of the avocado. Spoon the avocado into a bowl and mash. Remove the seeds in the center of the tomato. Chop it up finely and add to mix. Chop jalapeno. I like to leave the seeds for the extra bite, but it is optional. Chop up one quarter red onion very finely and add. Make sure to squeeze the lime juice into it and add salt to your liking. Set in fridge. FYI- you can take the inner seed and leave it in the mix to prevent oxidation and the Guacamole turning color.

Refried Style Beans

drain beans if you’re using a can. Place chopped and sautéed onions in a medium sauté pan until lightly browned. Set aside.

On a grill, grill the red pepper and jalapeno until charred on the outside. Once done, chop it up and add all ingredients to a Vitamix or food processor and process until smooth. Put in a container and set aside.

I used a jar of Trader Joes beans and corn salsa and chopped up some romaine lettuce to add to the tortilla.

Once prepared, don’t be afraid to add some hot sauce for extra zing.
