Summer is a great time to enjoy the freshest produce: light, low calorie, and refreshing. This savory soup is delicious and can be very versatile. Each time you make it, you can add different green leafy vegetables and change it up to add a variety of nutrients.

Both the celery and cucumber in this soup are made up of 95 percent water and are ideal for cooling and for staying hydrated on those scorching hot summer days. Cucumbers and celery are high in fiber and low in calories which makes them perfect for keeping you looking and feeling great in that swimsuit.

If you grew up watching the cartoon Popeye, then you know he ate spinach to grow big and strong. This is because spinach has a high protein content that helps build big strong muscles, and it doesn’t stop there. It is high in fiber, vitamins A, C, E, and K, thiamin, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, copper, and manganese. Overall a pretty amazing food. Spinach is also a great addition to this green soup because it has a very mild taste. This soup will impress even the green soup newbies.

Summer Chillin’ Green Soup


  • 1 English cucumber
  • 1 small avocado
  • ½ cup of parsley or cilantro
  • 1 lemon juiced
  • 2 large celery stalks
  • 1 cup of spinach
  • 1 cup of water
  • Salt to taste
  • Garlic powder to taste


  • Diced purple cabbage
  • Diced red pepper
  • Hemp seeds
  • Nutritional yeast
  • Cracked black pepper

Place all ingredients except the toppings in a high powered blender until smooth. Add water ½ a cup at a time, and if it’s still too thick, add more as necessary according to your preference. Place in a bowl and add diced purple cabbage and diced red pepper. Sprinkle with hemp seeds, nutritional yeast, and cracked black pepper.
