Sprouted Lentil and Mung Bean Mix

Ingredients:

  • 3/4 sprouted mung bean (Tru Roots brand)
  • 1/2 cup sprouted lentil trio (Tru Roots Brand)
  • 1 onion, chopped
  • 3 cloves garlic
  • 1 cup peas
  • 2 cups kale, chopped
  • 1 cup lima beans
  • 2 zucchini, peeled and chopped
  • 1 tsp Braggs apple cider vinegar
  • 1 tsp salt
  • 1 tsp pepper
  • Oil of your choice
  • 1 orange or lemon, juiced.
  • 1 bunch parsley, chopped

Directions:

Bring about 6 cups of water to a boil. Add lentil trio, mung bean mix, onions, garlic, salt, and pepper and let it simmer for about 10 minutes or until desired bean texture. Less time equals crunchier mix.

Add lima beans, apple cider vinegar (the apple cider vinegar releases the minerals), kale, peas, and zucchini, and let it simmer for about 5 minutes.

Once you have cooked to your desired consistency, drain through a colander.

Serve in a bowl and add more salt and pepper if needed.

Add a few tablespoons of oil. I use a 5 oil mix of avocado oil, walnut oil, orange oil, olive oil and grapeseed oil.

Add orange or lemon juice and mix around

Sprinkle with parsley and serve.
