Raw White Chocolate Very Berry Cake

I'm a big fan of white chocolate and when I get the craving for some, this is what I make. This is a very simple recipe but it will vanish 5 minutes after you set it before guests—that's if you decide to share! Give it a try and tell me what you think!


  • 1 regular Cake Pan
  • 1 cup Blueberries
  • 1 cup Strawberries sliced
  • 1 cup Raspberries
  • 1½ cups Cashews
  • 3/4 cup Water
  • 1/2 cup Maple Syrup
  • 1/2 cup melted Cacao Butter
  • 1 tsp Vanilla Powder


Mix the cashews, cacao butter, maple syrup, and vanilla essence with the water in a blender until smooth—this is the white chocolate mix. Set aside.

Start putting a mix of the berries at the bottom of the pan. Add a little of the white chocolate mix slowly, then add some more berries. Repeat until you have emptied the whole white chocolate mix into the pan.

Top off with berries and set in the fridge until desired consistency.
