You call it healthy, but the family calls it a dinner win! These mushroom red pepper tacos are definitely a dinner win!

Mushroom Red Pepper Tacos

Ingredients

Tacos

  • 2 tablespoons olive oil
  • 1 sweet onion, diced
  • 16 oz. Cremini mushrooms, sliced
  • 2 red peppers, sliced
  • 4 garlic cloves, minced
  • 2 tablespoons tamari
  • ¼ cup cilantro, chopped
  • Large lettuce leaves or taco shells of your choice

Slaw

  • 1 bunch kale thinly, sliced
  • 2 limes, juiced
  • 1 cup pineapple, diced
  • 1 jalapeno seeded and chopped
  • ¼ cup cilantro chopped

Cilantro Lime Dressing

  • 1 cup plain Greek yogurt
  • 1 cup cilantro rough chopped
  • 1 jalapeno seeded and rough chopped
  • 2 garlic cloves
  • 1 teaspoon cumin
  • 1 lime, juiced
  • 1 tablespoon Vitamin Mineral Rush
  • Pinch of salt

DIRECTIONS

Slaw

Put chopped kale into a bowl, pour the lime juice over it add a pinch of salt and massage into the kale. Add the remaining slaw ingredients and toss. Put in the fridge until ready to serve.

Cilantro Lime Dressing

Put all cilantro lime dressing ingredients into a blender and blend until smooth and creamy. Refrigerate until ready to serve.

Tacos

Heat oil in a pan, add pepper and onions, cook about 5 minutes, add mushrooms and garlic, cook about 10 minutes, add the tamari, and cook for about 2–3 more minutes. Remove from the heat and stir in the cilantro.

Assemble your taco and ENJOY!
