Easy Vegan Mac and Cheese

Of course, nothing tastes like the real thing, but this version will surely hit the spot. It is nice to be able to eat something that is creamy without any dairy. It’s also great to be able to mimic the color of cheese with whole foods such as butternut squash. The blend of tahini, miso, squash and nutritional yeast gives this mac its cheesy consistency. If you are grain free, then choose to make this mac with lentil or chickpea pasta, that way it’s not only gluten-free but high in fiber and protein!
