Can I have a cookie? Yes, you can! These cookie carob dough balls will give protein and delicious happiness!

Cookie dough will always have a soft spot in my heart. Whenever I see cookie dough, it serenades me into its delicious sweet texture and crunchy chocolate chips. It always entices me to eat more. With my giant spoon, I dig into this mixture and then before I know it, it’s gone. Well, thank goodness this cookie dough is packed with protein, fiber, and nutrients! This cookie dough is also egg free, so it is safe to eat. These cookie dough balls are absolutely delicious and super easy to make. You can make a large batch and place them in the freezer. They will last 1–2 months in an air tight container.

I used carob chips in this recipe instead of chocolate. So what exactly is carob? Carob is harvested from pods, just as cocoa is. These sweet beans are grown around the world. Carob has many of the same textural properties as cocoa but is 100 percent vegan. Carob is used as a substitute for chocolate in baking and sweet treats. Carob has many wonderful properties such as the ability to lower blood cholesterol and rich in calcium. Carob just like cocoa has antioxidants. Carob also contains selenium which is wonderful for anyone suffering from thyroid issues.

These cookie dough protein balls are awesome after or before an intense workout. It’s the perfect treat without adding any refined sugars to your body. If you have kids, these are wonderful to pack in a lunch bag. These cookie dough balls are vegan, gluten free, grain-free, raw and refined sugar free. I used coconut butter in this recipe, but you can always substitute it for almond butter or peanut butter. The best part about these little bundles of joy is that they only take 5 minutes to make (and 1 second to eat).

Cookie Carob Dough Balls

Ingredients

  • 1 cup raw almonds
  • 8–10 Medjool dates (pitted)
  • 1/2 cup almond meal
  • 1/2 cup desiccated coconut
  • 2 tablespoons coconut butter
  • 1 scoop Sunwarrior vanilla protein
  • 1/8 teaspoon salt
  • 1/2 cup carob chips

DIRECTIONS

1.) Place all ingredients except carob chips in your food processor. Pulse for 1 minute until the mixture is tacky and holds together.

2.) Remove from food processor and place in a medium size bowl. Stir in carob chips and using an ice cream scooper, scoop dough into balls. Place in an airtight container in the fridge or freezer.
