Give your grill some love with these cilantro lime tofu kebabs! There’s no better way to celebrate in season foods!

One second summer is here, the next it’s gone in a flash. Summer vegetables should be celebrated and loved just as much as everything else that goes on to the grill! Depending on where you live, different vegetables will be in season and fresh. Currently, fresh zucchini and corn are everywhere. When grilling these vegetables, we are simply cooking the exterior to give a beautiful smoky flavor while the nutrients stay mostly intact inside. Marinating the tofu overnight will ensure that we really soak up the flavors of the herbs, spices, oils, and citrus you are trying to absorb. The next day, all you need is to fire up the grill, and you got yourself a wicked meal!

Feel free to customize your kebabs by adding mushrooms, onions or peppers!

Cilantro Lime Tofu Kebabs

Ingredients

  • 1 package extra firm tofu
  • 1 cup chopped zucchini 
  • 10 grape tomatoes
  • 1/4 cup lime juice
  • 1 tablespoon avocado oil
  • 1/4 cup fresh cilantro
  • 1 clove garlic
  • 1 teaspoon cayenne powder 
  • Himalayan salt and pepper

DIRECTIONS

1.) Remove tofu from package and drain water. Place tofu in a Ziplock bag with cilantro, avocado oil, garlic, cayenne, salt, and pepper. Shake well and place in fridge for 12–24 hours to marinate

2.) Preheat grill. Remove tofu from package. Dice into cubes and place on skewers along with mixed vegetables. Grill for 5 minutes on each side. Remove from heat and serve.

There are so many great marinades for these kebabs. This recipe uses a cilantro lime marinade. You can also play around with different marinades such as:

Japanese Marinade

  • 1/4 cup tamari
  • 3/4 mirin

Greek

  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 2 garlic cloves
  • 1 tablespoon oregano 

Middle Eastern

  • 1 tablespoon cardamom
  • 1 tablespoon cumin
  • 2 crushed garlic cloves
  • Salt, pinch
  • 1/3 cup olive oil
  • 1/2 cup lemon juice
