Welcome to the spirited taste of winter! This Christmas Mint Pattie smoothie bowl is everything cool and refreshing while also being filling and full of everything good for you! Merry Christmas!

Peppermint patties are reminiscent of my childhood. The shiny foil-wrapped patties bought at the local candy store were only 5 cents. Yes, that’s right, a mere nickel. They were a favorite, so a delicious home-made smoothie version was needed. So, I set out to recreate the cooling, minty sensation and the addictive smooth chocolate of those patties I loved. It’s fantastic. I suggest you keep your smoothie blend thick and creamy with the use of more ice if needed.

Christmas Mint Pattie Smoothie Bowl

Ingredients

Smoothie

  • 1/2–2/3 cup full fat organic canned coconut milk
  • ½ cup organic spinach
  • 2/3 cup frozen avocado chunks
  • 1–2 drops food-grade peppermint essential oil
  • 1 serving Super Greens w/ mint
  • 1 scoop Warrior Blend vanilla protein
  • ½ cup crushed ice, or as desired
  • 1 heaping tablespoon cacao nibs or high quality vegan dark chocolate/chips
  • Sweetener as desired such as soaked dates, or maple syrup

Toppings

Vegan cream or coconut yogurt, crunchy chocolate granola, cacao nibs, pomegranate seeds, mint leaves, cacao powder, or matcha tea

DIRECTIONS

Measure all of the ingredients in your power blender in the order above with the exception of the cacao nibs. Blend using the tamper to ensure a creamy mix. Once you have a thick consistency add cacao nibs and blend just to mix nibs throughout.

Pour into bowl or latte cup, garnish as desired, and dig in with a spoon and a satisfied smile.

Teri’s Tips

If you don’t have avocados, you can substitute with frozen banana chunks. It will add sweetness so taste test before adding additional sweetener.
