Gluten-free Crust

Creamy Pumpkin Layer

  • 1 ½ cups raw cashews
  • 1/3 cup yacon syrup
  • 1/3 cup steamed pumpkin (or canned, unsweetened pumpkin)
  • 1 teaspoon organic pumpkin spice

  1. Soak the cashews in water for 1 hour. Discard the water. Line a pan or glass dish with parchment paper and set aside.
  2. Place the crust ingredients in a food processor. Pulse until it turns into a cookie dough texture.  Press this mixture evenly onto the bottom of pan or dish and place it in the freezer while you prepare the pumpkin filling.
  3. Place the pumpkin filling ingredients in your food processor and pulse until smooth. Pour the mixture over the cacao crust in the baking pan and spread it evenly. Freeze the dessert for a few hours.
  4. Cut into squares. Serve. Store in freezer.
