Get some antioxidant love for your body with vitamin rich berries in this tasty berry jam. Berry up!

Berries are one of the best sources of antioxidants you’ll find; it also doesn’t hurt that they taste delicious. The antioxidant properties in berries help fight something called oxidative stress which is caused by free radicals. Free radicals are atoms that are formed when oxygen interacts with certain molecules. The danger from them comes when they interact with cellular components such as cell membranes or DNA. The biggest antioxidant micronutrients are Vitamin C, Vitamin E and Beta-Carotene. Because the body cannot make these nutrients itself, it’s important to get it through your diet. Berry up!

Ingredients

  • 1 pint of Blackberries or any other berry of choice (the riper the fruit, the better!)
  • 2 tablespoons of chia seeds
  • 2 tablespoons of coconut sugar, maple syrup, or other sweetener of choice

DIRECTIONS

1. Rinse the berries under cold water

2. In a mixing bowl, mash the berries with a fork or a masher (you can leave some chunks)

3. Place the berries into the pot on medium heat, let it come to a boil and then on low for 15 minutes

4. The berries will start to break apart more, and become a thinner consistency

5. Add in chia seeds and sugar, and simmer for another 5–10 minutes

6. The mixture will start to become thicker, at this point you can turn off the stove

7. When mixture is to your desired consistency, pour it into your canning jar or a slice of toast and enjoy
