Is your salad starting to feel boring? Time to get dressed to go out with this amazing Basil N Orange Vinaigrette! Salad has never looked or tasted better!

Raised very frugally I am always mindful to avoid waste, and this recipe came as a perfect way to use up the few tablespoons of pesto at the bottom of my blender that was difficult to access when I made my own homemade pesto. I found that the flavor came out perfect for an amazing basil and orange vinaigrette!

Basil N Orange Vinaigrette

Ingredients

  • 3 tablespoons pesto
  • 1 organic orange zested and juiced
  • ½ clove garlic
  • Pinch sea salt and black pepper
  • 1–3 teaspoons white wine vinegar
  • Splash of olive oil, as needed

DIRECTIONS
  • If you’re making your own pesto, then follow the instructions at the above link and remove most of the pesto from the blender (you will want to leave a few tablespoons). If you are using an already-made pesto, then measure all ingredients into the blender.
  • Blend to a creamy dressing, adding a splash of olive oil, tasting and adjusting seasonings and consistency as desired.
  • Drizzle over your favorite salad!

TERI’S TIPS:

Mix and match the herbs, greens if desired. A little arugula or watercress adds a nice peppery kick.

Using both parsley and basil, adding a teaspoon or so of Spanish paprika and splash of additional oil gives this a playful Spanish flavor. A few olives add a yum factor as well.

These recipes can be made in a processor, yet it can be a little precarious making the dressing due to the additional liquid so be careful.

If you have orange infused olive oil on hand, it's heavenly.
