Veggie Burrito with Fresh Guacamole

Guacamole:

  • 2 ripe avocados, diced
  • 1 teaspoon fresh kosher salt
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • ½ jalapeño pepper (optional)
  • Large spoonful of onion, finely diced
  • ¼ cup Vegenaise
  • 1 tablespoon cilantro, chopped
  • 1 lime, juiced

Stir all ingredients, except cilantro and lime juice, together until fairly smooth. Add cilantro and lime juice. Stir.

Potato mixture:

  • 1 teaspoon olive oil
  • ½ cup onion, diced
  • 1 cup potato, diced and blanched
  • 1 cup mushrooms, sliced
  • Pinch Kosher salt

Heat olive oil in pan. Add onion, it should sizzle when you put it in the pan. Add potatoes and cook until potatoes are slightly brown and onions start to caramelize, remembering to stir. Add mushrooms and salt. Cook until potatoes are brown.

Burrito:

  • Wheat and whole grain tortilla
  • Vegetarian refried beans
  • Brown rice, long grain

Layer refried beans, brown rice, and some of the potato mixture you cooked on tortilla. Add your choice of fillers: tomatoes, olives, greens, etc. Top with guacamole. Add any sides you want to your plate and enjoy!
