Vegan Monster Burger Burrito Recipe

Jason Wrobel, aka J-Wro, celebrity vegan chef, TV host, and monster recipe creator, combines two of his favorite foods, a burger and a burrito, into something that should have always existed. This vegan, mostly raw burgerito brings together delicious veggies, black rice tortilla wraps, and a black bean burger and tops it all off with a spicy, smoky, flavorful blast of colorful, awesome sauce. This sauce is the star here. You'll want to use it in many, many other recipes. Enjoy the yumminess!

Vegan Monster Burger Burrito Recipe

Red Pepper Tahini Dressing
  • 1 red bell pepper, diced
  • ½ zucchini, diced
  • 3 sprigs green onion
  • ½ habanero pepper (Optional)
  • ¼ cup raw tahini (or ground sesame seeds of the same amount)
  • 1 tablespoon raw coconut aminos
  • Dash smoked paprika (about ½ teaspoon)
  • Pinch black pepper
  • Pinch Himalayan crystal salt
  • Juice of 3 lemons
Burgerito

  • 1 Hillary’s Eat Well Spicy Adzuki Bean Burger patty
  • ¼ cucumber, julienned
  • 1 red bell pepper, julienned
  • ½ carrot, julienned
  • 1 avocado, julienned
  • Baby Boston Living Lettuce
  • Fresh mizuna sprouts
  • Fresh cilantro
Combine all ingredients for Tahini Dressing in a blender. Blend until a smooth consistency is obtained.warming_the_tortilla_imageWarm black rice wrap and grill the burger patty in a teaspoon or two of coconut oil. Cut patty in half and place on black rice wrap. Stack ingredients on top of burger.Drizzle Tahini Dressing over the top.Fold up and enjoy.
