Vegan "Fried" Rice - Jason Wrobel

Vegan "Fried" Rice

  • 1 cup red bell pepper, chopped
  • 1 cup sliced carrots
  • ½ cup chopped green onions
  • ½ cup red beets, julienne
  • ¼ cup purple cabbage, sliced thin
  • ½ cup peas
  • ½ cup yam, julienne
  • 1 cup water chestnuts, peeled and chopped
  • 1 cup sprouted brown rice
  • 1/2 cup sprouted wheat berries (optional)
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 1 teaspoon minced jalapeno
  • ¼ cup tamari
  • ¼ cup fresh-squeezed lemon juice
  • ½ cup olive oil
  • 2 teaspoons orange rind, grated

Instructions

  1. Combine the above ingredients, except orange rind, in a serving bowl.
  2. Mix, sprinkle the rind on top and serve.
