Vegan "Fried" Rice
- 1 cup red bell pepper, chopped
- 1 cup sliced carrots
- ½ cup chopped green onions
- ½ cup red beets, julienne
- ¼ cup purple cabbage, sliced thin
- ½ cup peas
- ½ cup yam, julienne
- 1 cup water chestnuts, peeled and chopped
- 1 cup sprouted brown rice
- 1/2 cup sprouted wheat berries (optional)
- 1 tablespoon minced ginger
- 1 tablespoon minced garlic
- 1 teaspoon minced jalapeno
- ¼ cup tamari
- ¼ cup fresh-squeezed lemon juice
- ½ cup olive oil
- 2 teaspoons orange rind, grated
- Combine the above ingredients, except orange rind, in a serving bowl.
- Mix, sprinkle the rind on top and serve.
