Vegan Date and Almond Cookie Recipe

Superfoods keep our bodies functioning properly, extending our lifespan and help us to feel energetic. One on the long list of superfoods is dates. Dates are rich in several vitamins and minerals as well as fiber. These delicious fruits contain oil, calcium, sulfur, iron, potassium, phosphorous, manganese, copper, and magnesium, which are all beneficial for health. They also help give relief from constipation, intestinal disorders, heart problems, anemia, diarrhea, abdominal cancer, and many other conditions.

These benefits reach out to pregnant women as well. One study performed by researchers at the University of Science and Technology set out to discover how dates impacted labor parameters and delivery outcomes. After studying 69 women for a year and 1 month, the researchers found that “the consumption of date fruit in the last 4 weeks before labor significantly reduced the need for induction and augmentation of labor, and produced a more favorable, but non-significant, delivery outcome.” Another study shows us that dates positively affect our brain health. Some studies, such as one found in JAMA International Medicine, found that sufficient vitamin B6 levels are associated with improved brain performance and better test scores. Not only does this fruit taste amazing, it is amazing for our health. What better way to expand our health than by enjoying the flavor in a clean cookie!

  • ½ cup applesauce
  • 1–½ cups almonds, sliced
  • ¾ cup agave or other sweetener (non-vegan option: honey)
  • 1 cup dates, chopped
  • 1 teaspoon cinnamon
  • 1 teaspoon apple pie spice
  • 1 tablespoon chia seeds (optional for nutrition boost)


Pour applesauce into a large mixing bowl.

In a second bowl, mix almonds, agave, dates spices, and seeds.

Scoop mixture into the applesauce bowl and fold until well mixed. Do not over mix. The moment mixture is combined, stop mixing.

Use a regular teaspoon to shape cookies and place on cookie sheet.

Place in oven on lowest shelf at 350 for 10–15 minutes, until lightly brown.
