Pine Nut Cream
1 cup pine nuts, soaked 2 hours 1/4 cup water 2 tablespoons lemon juice 1/4 teaspoon sea salt Dash of white pepper Place all ingredients into a Vita-Mix and process until completely smooth.
3 cups fresh carrot juice 3/4 cup butternut squash, cubed 1/4 cup sliced leeks 1 1/2 teaspoons pumpkin pie spice 1 teaspoon fresh thyme 3/4 teaspoon sea salt pinch of pepper 3/4 medium-sized avocado Place all ingredients except avocado into a Vita-Mix and process until smooth. If you like a warm soup, blend for two minutes. Add avocado and blend again until smooth. Pour into soup bowls and serve with pine nut cream. Soup will keep for 3-4 days in refrigerator. Pine nut cream will last about a week in the refrigerator. Quick & Easy Tip: You can use store bought organic carrot juice and pre-cut butternut squash if you’re in a pinch for time. Cost Cutter: You can substitute cashews for the pine nuts.
