Santa Fe Lettuce Wraps




The kids are starving, and you haven’t even thought about dinner yet. Don’t worry, we’ve got a quick, easy, and nutritious solution in these Santa Fe lettuce wraps!

Who doesn’t need a quick meal? This meal took 15 minutes from start to finish! I always try to keep most ingredients on hand, so I can make this meal in a pinch especially when I have avocados that need to be used. The dressing makes this meal superb and in my opinion, makes it over the top delicious!

The black beans, corn, and spinach all add necessary nutrients to your diet that help with your overall health. The black beans especially are a great way to fill fuller longer without eating meat. My kids like to eat it with tortillas because little hands have an easier time wrapping around tortillas.

INGREDIENTS

Wraps

  • 1 teaspoon olive oil
  • 1/4 cup minced red bell peppers
  • 1/4 cup minced scallions
  • 2/3 cup organic non gmo frozen corn
  • 1/2 cup organic canned black beans, rinsed and drained
  • 1/2 cup frozen spinach, thawed and drained
  • 2 tablespoons jalapeno peppers
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 1 cup reduced vegan shredded cheese
  • 8 large iceberg lettuce leaves
  • One recipe of Avocado Cilantro Ranch Dressing

Avocado Cilantro Ranch Dressing

  • ½ cup nondairy sour cream plus 2 tablespoon olive oil
  • 1 small jalapeno, seeds removed, leave them in if you want it extra spicy
  • 1/4 cup of fresh cilantro
  • 1 medium Haas avocado
  • 1 clove garlic
  • 2 tablespoons chopped scallion
  • Juice of 1 lime
  • 1/8 teaspoon cumin
  • 1/4 teaspoon fresh ground pepper
  • 1/2 teaspoon kosher salt

DIRECTIONS

Wraps

Heat the oil in a large skillet over medium-high heat. Add the red bell pepper and scallions to the pan and sauté for 2 minutes until tender. Add the corn, black beans, spinach, jalapeno peppers, cumin, chili powder, salt, and cayenne pepper to the pan. Cook for another 3 to 4 minutes, stirring well so the spinach gets mixed in with everything.

Dressing

Combine all the ingredients in a blender and blend until smooth.
