Everyone loves a good icy treat in the middle of the summer, especially when this treat is made with the best and healthiest ingredients. Who’s ready for a cold, creamy, delicious treat? This recipe will definitely deliver all you want and then some.
- 1 cup orange juice, fresh squeezed
- 6 tablespoons honey, agave, or maple syrup
- Handful of raspberries, chopped
- 2 teaspoons orange zest
- 1/2 teaspoon vanilla extract
- 2 cups coconut milk
Start by adding fresh orange juice and 2 tablespoons honey (or your favorite sweetener) to a pot. Simmer over medium heat until it’s reduced to about half the original liquid amount—this will take 10–20 minutes. Take this syrup off the stove and add to it almond or coconut milk, sliced fresh raspberries, and orange zest. To top it off, throw in some vanilla and a little more sweetener, then whisk away. Pour the concoction into your favorite molds, freeze, and enjoy!
