Matcha Chia Pudding

For a grab-and-go healthy snack, this matcha chia pudding with all sorts of health benefits, great protein, and fantastic flavor is just what you need!

I’m the type of person that could eat plain chia pudding no problem, but with the endless flavor palette available, I thought it was time to create a unique and delicious flavor! Chia pudding is a great breakfast or pick-me-up snack as it is rich in antioxidants, omega 3 fatty acids, and can help to provide loads of fiber, iron, and calcium – nutrients which are often overlooked in plant-based diets.

In this recipe, we’re using Matcha! I’m sure you’ve seen the matcha craze over the past couple of years, and there’s good reason! Not only does matcha help to detoxify the body, but it also may help to reduce the risk of cancer, and can even help promote weight loss. If you’re a big coffee drinker or an “anything but water” drinker, matcha can be a great substitute as it not only tastes delicious but can aid your body in so many ways.

While you can use whatever plant milk you’d like in chia pudding, this version contains coconut milk! Not only is it a great texture and flavor, but I love the dose of healthy fats I get from coconut milk. When paired with the matcha, you get an extremely creamy texture that’s almost like a matcha latte but just thicker…and with chia seeds!

My favorite thing to do is to make a huge batch of this chia pudding and pre-portion it into jars for grab-and-go options. You can also make this super customizable by adding a scoop of Sunwarior Warrior Blend vanilla protein, mini chocolate chips, hemp seeds, or a variety of nuts and fruits.


Matcha Chia Pudding

  • ¼ cup chia seeds
  • 1 can full-fat coconut milk
  • 2–3 tablespoons maple syrup
  • 1 ½2 tablespoons matcha powder (2 Trader Joes Matcha Green Tea single serve packets)


Mix all ingredients well in a large bowl. Cover and let sit for at least 3 hours. Enjoy cold!
