Spicy Red Pepper Gazpacho
Jason Wrobel, aka J-Wro, celebrity raw chef and TV host, gets you ready for the warmer months with a chilled, refreshing, and delicious gazpacho with a spicy kick. This raw soup is super rich in beneficial enzymes, vitamin C, antioxidants like lycopene, and immune boosting phytonutrients. The always hilarious J-Wro adds cilantro to the mix for powerful detoxifying action, spices for circulation, and avocado for anti-inflammatory healthy fats. But the flavor is where this gazpacho shines.
- 1 large red bell pepper, chopped
- 1 roma tomato, peeled and chopped
- 1/4 cup onion, chopped
- 1 to 2 cloves garlic, pressed
- 1 small jalapeno, seeded and minced
- 1/2 cup water
- 1 tablespoon cold pressed extra-virgin olive oil
- 1/4 cup fresh cilantro leaves
- Juice of 1/2 lime
- 1/4 teaspoon cumin
- 1 teaspoon sea salt
- Dash of fresh ground black pepper
- 1/2 avocado
Put all ingredients except avocado in food processor or blender. Pulse for 2–3 seconds a few times until you reach the texture you prefer. I suggest going for a fine mince for some pleasant chunkage. Pour into bowl. Top with diced avocado. Serve. Makes 2 servings.
