Coconut Mango-Rum Cocktail Ice-Cream Pops

INGREDIENTS

  • 2 scoops Sunwarrior Warrior Blend Vanilla
  • 1 cup unsweetened coconut milk
  • ¾ cup coconut water
  • 2 shots Bacardi Gold Rum
  • 4 tablespoons coconut cream
  • 3 tablespoons coconut flakes
  • 1 ¼ cup organic mangos
  • ¼ teaspoon cinnamon
  • 1 teaspoon ground vanilla bean
  • 1 teaspoon lemon juice

DIRECTIONS

1. Combine all ingredients except about of 1 ¼ cup of mangos and coconut flakes in a blender and blend until smooth and creamy.

2. Add the rest of the mangos and coconut and pulse until clumpy without blending entirely.

3. Next pour coconut mango rum cocktail ice-cream in ice-cream molds.

4. Store in freezer to set over night.

5. Take out and eat them for a nice protein and rum cocktail dessert.
