Vegan No-Bake Chocolate Peanut Butter Oatmeal Cookies
Ingredients:
- 3 cups rolled oats (certified gluten-free if needed)
- ¼ cup Sunwarrior Cocoa Powder
- 1 scoop Sunwarrior Warrior Blend, chocolate peanut butter flavor
- ¾ cup creamy peanut butter
- ½ cup agave
- ½ cup coconut oil
- ½ cup almond milk
- 1 teaspoon vanilla extract
- ¼ teaspoon Sunwarrior Sea Salt
- Optional mix-ins: chopped nuts, shredded coconut, dairy-free chocolate chips
Instructions:
- Line a baking sheet with parchment paper or a silicone baking mat. This will prevent the cookies from sticking.
- In a large mixing bowl, combine the rolled oats, cocoa powder, and Warrior Blend. Stir them together until well mixed. If you're adding any optional mix-ins, like chopped nuts or chocolate chips, you can add them to the bowl at this stage. Set aside.
- In a small saucepan, melt the coconut oil over low heat. Once melted, remove the saucepan from the heat and stir in the peanut butter, agave nectar, almond milk, vanilla extract, and salt. Mix until the mixture is smooth and well combined.
- Pour the wet mixture over the dry oat and cocoa mixture. Using a spatula or wooden spoon, mix everything together until the oats are well coated and the mixture is evenly combined. The mixture should be somewhat sticky and hold together when pressed.
- Using a spoon or your hands, scoop out portions of the mixture and shape them into cookies. You can make them whatever size you prefer – about 2 tablespoons of mixture for each cookie works well.
- Place the shaped cookies onto the prepared baking sheet and put the baking sheet in the refrigerator. Allow the cookies to chill for at least 30 minutes or until they are firm and set. This will help them hold their shape.
- Once the cookies are chilled and firm, you can serve them immediately. Store any leftovers in an airtight container in the refrigerator to keep them fresh. These cookies also freeze well, so you can make a batch and store them for later.
These Vegan No-Bake Chocolate Peanut Butter Oatmeal Cookies are a delicious and easy treat that's perfect for satisfying your sweet tooth without needing to turn on the oven. Enjoy the combination of chocolate, peanut butter, and oats in every bite!
