Vegan Macadamia Chocolate Chip Cookies

Jason Wrobel—aka J-Wro, celebrity vegan chef and humorous television host—fulfills a long time request out of Chicago for a vegan chocolate chip cookie recipe. Jason does this and then takes it further by making these vegan cookies gluten free and full of superfoods too. Oat flour, rich in beta glucans and other healthy complex carbohydrates, coconut sugar, ground flax seed with essential fatty acids, arrowroot, Warrior Blend protein, vanilla, organic apple sauce, coconut oil with its medium chain triglycerides, organic cacao chips, macadamia nuts, and raw coconut make these cookies healthy, delicious, and nutritious.

Seriously, these little guys combat inflammation, cholesterol, and more. Fifteen minutes in the oven and you have gooey, crunchy, yummy goodness. Resist the urge to slap somebody though, please! They are so good that it's hard not to, but you will make it through

Vegan Macadamia Chocolate Chip Cookies

Ingredients:

Dry

  • 1½ cups gluten-free oat flour
  • 1 cup gluten-free flour
  • 1 cup coconut palm sugar
  • ¼ cup ground flax seed
  • ¼ cup arrowroot powder
  • 1½ teaspoons xanthan gum
  • 1 teaspoon baking soda
  • 1 teaspoon Himalayan crystal salt
  • 1 scoop natural Sunwarrior Warrior Blend protein powder

Wet

  • 2 tablespoons vanilla extract
  • 4–6 tablespoons organic applesauce
  • ¾–1 cup raw coconut oil, melted

Toppings

  • 1 cup cacao chips
  • ½ cup macadamia nuts
  • ¼ cup raw shredded coconut

Method:

Heat oven to 325° F.

Combine all dry ingredients into a large mixing bowl and whisk until thoroughly mixed together.

Add wet ingredients and mix together with a spatula until it forms a thick dough. Add in the toppings and mix one last time.

Line large baking sheet with parchment paper. Use a spoon to form discs of dough and place on cookie sheet about 1 inch apart.

Cook for about 15 minutes or until golden brown. Let cookies cool for about 15 minutes before eating.
