Valentine ’s Day: love, cupids, and chocolates! This year, celebrate this day of love with these rocking avocado truffle bites. This recipe is so simple and best part is that you can make them a night ahead. Avocado and chocolate go hand in hand. Now, I know you are probably thinking this sounds insane but trust me, it’s a match made in heaven. I use avocados every single day: in my salads or as a replacement for butter or oil in recipes! The avocados are creamy and provide a silky, yet rich, texture to the truffle.

An avocado is actually a fruit. A fruit that is full of healthy fats. Avocados have healthy monounsaturated fats that are incredible for the heart. Since this type of fat is healthy, it actually helps to break down unwanted fat in the body thus aiding in weight loss. Avocados also have fiber which helps your digestive system. Can you believe that an avocado has more potassium than bananas! Put that banana down post-workout, and opt for an avocado instead! Is there anything an avocado can’t do? I think not!

These no bake avocado truffles are vegan, refined sugar free, gluten free, and awesome. I used organic goji berries and dried cranberries. You can top these off with pink and red sprinkles as well! If you don’t want to use sprinkles, you can always serve them alongside some fresh red berries. If you want to go the extra mile, you can serve these with a beautiful berry coulis. All you will need is one cup of berries, 2 tablespoons of water, and a blender. Blend it together, drizzle on top, and voila!

Love is in the Air Truffles

Ingredients:

  • 1 ripe avocado
  • 1/2 cup melted vegan chocolate
  • 1 teaspoon vanilla extract
  • 1 teaspoon Sunwarrior Sea Salt
  • 1 cup freeze-dried berries or sprinkles

Directions:

1.) Melt 1/4 cup vegan chocolate

2.) Place avocados, chocolate, vanilla and salt in a food processor. Mix for 30 seconds or until smooth

3.) Place mixture into a bowl and place in fridge for 20–30 minutes to stiffen up

4.) Melt remaining chocolate. Using an ice-cream scoop, scoop avocado mixture and dip into chocolate. Top with freeze dried berries or sprinkles.
