Easy Vegan Matcha Mushroom Pancakes

- 1 cup all-purpose flour
- 1 tablespoon Sunwarrior Matcha & Mushroom powder
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/4 teaspoon Sunwarrior Sea Salt
- 1 cup almond milk
- 1 teaspoon vanilla extract
Instructions:
- In a large mixing bowl, whisk together the flour, matcha mushroom powder, sugar, baking powder, and salt until well combined.
- In a separate bowl, whisk together the non-dairy milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with oil or cooking spray.
- Once the skillet is hot, pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.
