Pumpkin Spice Bars

The ingredient list is short and sweet, just like these bars. There are always healthy substitutes for our favorite recipes during the holidays. We can swap out traditional ingredients for healthier and more nutrient-dense ones. These bars have a base made from almond meal, which is gluten-free and paleo. In comparison to regular wheat flour, these bars are easy to digest on your stomach and rich in protein. This recipe uses coconut sugar which is lower on the glycemic index than regular table sugar. Unlike white sugar, coconut sugar still retains trace elements such as zinc. It also contains inulin which can help lead to a healthy gut. I used a can of organic pumpkin puree, but you are free to roast and blend your own pumpkin.
These bars pack a punch of spices, which are key to burst with flavor awesomeness. This recipe keeps very well in the fridge so you can double them up and save them for later. These bars would be great with blueberry, peach or cherry puree on top. Happy Baking!
