No-Bake Pumpkin Protein Bites

The best part of this recipe is that it is packed with healthy ingredients so you can be health conscious while also satisfying your sweet tooth. These are a great addition to your breakfast or the perfect way to add a sweet touch after dinner. In this recipe, there is no dairy, no sugar added and no flour. The flavor is savory, and the pumpkin mixed with pecans (with a touch of chocolate from the protein) gives the bites a moist consistency. One note: if the batter is too moist after using the food processor to grind everything together, add more cashews to slightly dry it out so that you can form the balls easier. Take advantage of the season of pumpkin in a healthy, feel-good way!

Ingredients:

  • 1/2 cup of pecans (a touch more is okay to give them a slightly nuttier taste)
  • 1 cup of medium size dates (pitted)
  • 1/3 cup of organic pumpkin puree (this should be measured exact)
  • 1 scoop of Sunwarrior Classic Chocolate Protein
  • 1/4 cup of shredded unsweetened coconut flakes
  • 1 tsp pumpkin pie spice
  • 1 1/2 tsp organic vanilla extract
  • 1 tsp cinnamon
  • 1 tsp Pink Himalayan sea salt
  • 1/4 tsp nutmeg

Directions:

1.Using a food processor, grind the pecans for 1-2 minutes until a fine texture is formed.

2. Combine all other ingredients and grind for a few minutes to form smooth batter (make sure large pieces of dates are not left behind - you may need to move the batter around with a spoon and the continue grinding to ensure this doesn’t happen).

3. Roll into bite-size balls (about 12-15 depending on size).

4. Store in refrigerator (and let cool/harden slightly for 30 minutes before eating any).
