Healthy Cucumber Sandwich Recipe

Make a yummy, healthy, and summery cool cucumber sandwich with Jason Wrobel.

Jason Wrobel of the clan Wrobel, the ever hilarious culinary genius who whips up fanciness in his kitchen for you, himself, family, and his celebrity clientele, takes a whimsical, raw vegan stab at a very traditionally southern and motherly recipe this week. That’s right, folks, J-Wro is tackling the southern snack of cucumber tea sandwiches. You’ll impress your friends with these adorable, dainty sandwiches next time you invite them over for tea.

Healthy Cucumber Sandwich Recipe

Ingredients:

Cheese Spread:

  • 1 cup soaked raw cashews
  • ½ lemon, squeezed
  • 1 tablespoon nutritional yeast
  • ¼ teaspoon ground black pepper
  • 2 teaspoons dried dill
  • ½ teaspoon sea salt
  • 1 teaspoon Immune Shield

Sandwich (numbers dependent on how much you serve):

  • Crustless vegan bread
  • Cucumber, thinly sliced
  • Baby spinach

Directions:

Let’s start with the cheese spread part of your mini-sandwiches. This cheese is mainly going to be cashews and you’ll want a food processor or high speed blender to make it all possible.

Start with your soaked, raw cashews. Add to them some citrus to kick the tang level up a few notches. Jason uses half a lemon, squeezed. Then nutritional yeast goes in. Not only does this boost the nutritional value (it’s in the name) with some powerful B vitamins, but it infuses this spread with the cheesy flavor you want. Ground pepper, dried dill, and sea salt round out the flavors. But J-Wro doesn’t stop there. He adds a splash of Immune Shield, the neutral flavored trace mineral and immune boosting product from Sunwarrior.

Blend it for about half a minute for a thick, creamy, spreadable cheese sauce that will be the envy of all who try it.

Break out your favorite crustless bread (it’s tradition) and spread on the cheese. You’ll place sliced cucumbers on next. Try out your favorite varieties. J-Wro goes English, but garden or lemon work too. Top that with some greens. J-Wro goes with baby spinach, but, once again you can use your favorites here. Don’t forget to spread the cheese on the other slice. You have two piece of bread here, people, and you don’t want to waste a single inch.

Cut them into even smaller, baby sandwiches. Traditionally, you cut at an angle, but they’ll taste the same either way. Toothpick these puppies up now, but the fancy toothpicks look better. Now whip up your favorite tea and enjoy the delicate flavor of these fun sandwiches! Go, do it now!
