Black Bean Burgers

Black bean burgers are perfect for that weekend barbeque or even during the week. You are gonna love this easy dinner recipe!

The black bean burgers are super easy and delicious. You can’t go wrong when you serve these. I serve them in a lettuce wrap or just eat them with a fork. Either way is amazing!

Black beans are a delicious source of folate and fiber that help with your digestive tract. Peppers are very high in vitamin C and are an excellent antioxidant. The oats have manganese and are a delicious whole grain. Combine them together and you have a dinner for champions!

Easy Vegan Black Bean Burgers

Ingredients:

  • 1 can (15 oz) black beans, drained and rinsed
  • ½ cup breadcrumbs (use gluten-free if necessary)
  • ¼ cup finely chopped onion
  • ¼ cup finely chopped red bell pepper
  • 2 cloves garlic, minced
  • 1 tablespoon ground flaxseed + 3 tablespoons water (flax egg)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for cooking)

Optional Toppings:

  • Lettuce
  • Tomato slices
  • Avocado
  • Vegan cheese
  • Vegan mayo
  • Pickles
  • Red onion slices

Instructions:

  1. In a small bowl, combine 1 tablespoon ground flaxseed with 3 tablespoons water. Stir well and let it sit for about 5 minutes to thicken.
  2. In a large bowl, mash the black beans with a fork or potato masher, leaving some beans partially intact for texture.
  3. Add the chopped onion, chopped red bell pepper, minced garlic, and the prepared flax egg to the mashed black beans.
  4. Add the breadcrumbs, ground cumin, smoked paprika, chili powder, salt, and pepper.
  5. Mix everything together until well combined. If the mixture is too wet, add a bit more breadcrumbs. If too dry, add a small amount of water.
  6. Divide the mixture into 4 equal parts and shape each part into a patty. Ensure the patties are firm and hold together well.
  7. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  8. Add the patties to the skillet and cook for about 4-5 minutes on each side, or until they are nicely browned and heated through.
  9. Serve the black bean burgers on burger buns or in a lettuce wrap with your favorite toppings such as lettuce, tomato, avocado, vegan cheese, vegan mayo, pickles, and red onion slices.

Tips:

You can also bake the patties in a preheated oven at 375°F (190°C) for about 20 minutes, flipping halfway through, if you prefer a lower-oil option.

These black bean burgers can be frozen. Simply shape the patties, place them on a baking sheet lined with parchment paper, freeze until solid, and then transfer to a freezer-safe container. Cook from frozen, adding a few extra minutes to the cooking time.
