Macadamia Coconut Crunch & Cashew Chia Energy Bars
Energy bars are an amazing way to get some quick energy, loads of nutrition, healthy calories, and above all they can be made within a few minutes and with any combination of nuts, seeds, and fruits of your choice. Two favorite energy bar recipes are Macadamia Coconut Crunch and Cashew Chia Bars.
Macadamia Coconut Crunch
Ingredients
- 2 cups macadamia nuts, soaked and dehydrated
- 1 cup coconut flakes, dried
- 2 tablespoons coconut oil
- 1 teaspoon cardamom powder
- 1/2 cup agave nectar (or preferred sweetener)
- 1/2 teaspoon Sunwarrior Ancient Sea Salt
Directions
- Using the S blade in a food processor, process the macadamia nuts until coarse. Add all other ingredients and pulse until mixed well. The mixture should be sticky and crumbly.
- Transfer the mixture to a glass pan. Spread evenly and then cut into small squares or rectangles. Wrap each bar in a dehydrator sheet and store in an airtight glass container in the refrigerator.
Cashew Chia Bars
Ingredients
Cashew Chia Bars
- 2 cups cashews, soaked and dehydrated
- 1/2 cup Sunwarrior Chia Seeds, soaked
- 1/2 cup sage honey (or preferred sweetener)
- 4 Medjool dates, pitted
- 1/2 teaspoon Himalayan sea salt
- Using the S blade in a food processor, blend all ingredients until sticky and crumbly. Transfer the mixture to a dehydrator tray and spread evenly. Score the dough, making small rectangles or squares.
- Dehydrate for 10 to 14 hours at 115°F. Check to make sure the bars don’t get too dry. You could store these bars in an air-tight container in a cool and dry place.
