Jason Wrobel from the J-Wro Show, celebrity vegan chef, health enthusiast, and food DJ, spins out yet another delicious recipe with a vegan tortilla soup that you can make yourself in your own home with just a good blender. Toss hot water, red bell pepper, carrots, onion, fresh cilantro, garlic, paprika, and lime in your blender. Add a little Vitamin Mineral Rush for a healthy dose of vitamins and minerals along with a note of sweetness to cut the acidity of the tomatoes. Vegan pepper jack cheese and tortillas then give this soup the flavor you all know and love. Top it with avocado, salsa, and/or more crushed tortilla chips for a warm, creamy, heart-warming meal that makes even the coldest day a little brighter.
Easy Vegan Tortilla Soup
Ingredients:
- 4 Roma tomatoes, diced
- 2 cups hot water (raw version should use lukewarm water)
- ¼ red bell pepper
- 1 carrot, diced
- 2 tablespoons white onion, finely minced
- 2 sprigs fresh cilantro (about ⅛–¼ cup)
- ¾ teaspoon Himalayan crystal salt
- ¾ teaspoon garlic granules
- 1 teaspoon Herbamare herb mix
- ⅛ to ¼ teaspoon smoked paprika
- ½ lime juice, squeezed
- 1 serving Liquid Vitamin Mineral Rush
- ⅓ cup Daiya Vegan Cheese
Blend all above ingredients until smooth. *If using hot water hold a towel over the lid to help prevent mess. Add in ½ cup sweet potato tortilla chips. Pulse briefly a couple times to grind up chips. Top with fresh diced avocado and more crunched up chips. Makes one large or two small servings. Enjoy your soup!
